Sometimes criticized by purists, the French press can provide a great cup of coffee. Its achilles’ heel is proneness to over-extraction, so recommend transferring the entire pot to a carafe once pressed, or being sure to only use a single-serve-sized press.

DIRECTIONS
- Boil approximately 600g water for a 2-cup press.
- Grind 64g of coffee coarsely and then pour about 250g of water to allow it to bloom. Give it a gentle stir and wait 30 seconds.
- Pour the remainder of the water and let the coffee steep for precisely four minutes.
- Press the coffee firmly (it should give about 15-20lbs resistance—too much and your grind was too fine; too little and it was overly coarse).
Pour immediately, and enjoy your coffee!
